5 ingredients, fast and fantastic!
Preheat oven to 325 degrees. Grease and flour a large baking sheet.
Mix together coconut, sugar, flour and salt, breaking up any large pieces of coconut. Mix in 4 egg whites and almond extract.
Drop spoonfuls of coconut mixture onto the baking sheet. I use a heaping teaspoonful of it. It’s a bit sticky, so use the 1/2 teaspoon to get it onto the sheet in a somewhat pretty manner. Or use a cookie scoop.
Bake for 20 minutes. Inhale, because your kitchen smells fantastic.
Variation: dip in or drizzle on chocolate and/or colored candy coating.

We made these for Christmas and was Fabulous!!! Stayed nice and round not spread out like one I made in past. Dip in chocolate and YUM!!

I made these last night and they are WONDERFUL and so easy!
I pressed a maraschino cherry in the tops of some of them before I popped them in the oven. They turned out great.
I also dipped the tops of the rest of them in melted chocolate after they had cooled.
Yummy.

I made these yesterday and they are amazing. I even added mini chocolate chips to some and dipped some of the others in chocolate.
These cookies were so easy to make and tasted so amazing.
I can’t wait to make them again.
