Description

Wondering what to do with that jar of marmalade? This orange and almond cake recipe is so easy and delicious, you’ll love it!

Ingredients

  • 150 grams Margarine Or Unsalted Butter
  • 150 grams Caster Sugar
  • 2  Oranges, Zest Only
  • 3  Eggs
  • 125 grams Self Raising Flour
  • 25 grams Ground Almonds
  • 70 grams Thick Cut Marmalade
  • ¼ cups Toasted Almonds, For Garnish

Preparation

Preheat oven to 190ºC (375ºF or Gas 5). Line and grease a loaf tin 18cm by 8cm.

Cream the margarine and sugar until fluffy. Grate orange zest into the mixture and mix well. Add eggs and continue to mix until everything is combined. Add flour and ground almonds, continue mixing.

Transfer cake mixture into a prepared medium-sized loaf tin and bake for 35–40 minutes. Once done, turn out the cake onto a wire rack and leave to cool completely.

Spoon marmalade on top of the cake and sprinkle with toasted almonds. Have a slice with a cup of tea. Enjoy!
