Description

Easy, easy, easy and yet oh so good! This is a great cake to take to a summer potluck. It’s a great keeper and might even be better the next day.

Ingredients

  • FOR THE CAKE:
  • 2 cups Flour
  • 2 cups Sugar
  • 2 whole Eggs
  • ½ teaspoons Salt
  • 1-¼ teaspoon Baking Soda
  • 1 can 20 Ounce Crushed Pineapple With Juice, Reserve 1/4 Cup For Frosting

  • FOR THE FROSTING:
  • 5 cups Powdered Sugar
  • 8 ounces, weight Package Cream Cheese, Room Temperature
  • ½ cups Shredded Coconut
  • ½ cups Finely Chopped Toasted Pecans
  • ¼ cups Butter, Room Temperature
  • ¼ cups Crushed Pineapple (with Juice)
  • 1 teaspoon Vanilla
  • 1 dash Salt

Preparation

Preheat oven to 350 degrees F.

Mix all of the cake ingredients together. Pour into a greased 12 x 17 inch sheet cake pan. Bake at 350 degrees F for 20 – 25 minutes (until a finger pressed in the center of the cake does not leave a depression). Cool completely before frosting.

For the Frosting:

Mix together all of the frosting ingredients until well blended. If frosting is too thick, a small amount of milk may be added to make it a spreadable consistency. Spread over the top of the cooled sheet cake.

Hey Callie! Today was a crazy day and my schedule got turned upside down… so I needed a quick and easy dessert for the U.S. Marines that were about to occupy our home for our midweek Bible Study. I knew it would be sheet cake so off to “Tasty Kitchen” I ran. I found your recipe and can’t wait to taste it. It smells soooo good. It’s cooling now. Anyhow, I just wanted to say Thank you for sharing. You saved the day! :D
