Description

This recipe was given to me by my mother-in-law who lives in Maine. It’s so easy to put together … no need to make a crust!

Ingredients

  • 4 whole Eggs
  • ½ cups Sugar
  • ½ cups Bisquick
  • 1 cup Shredded Coconut
  • 2 cups Whole Milk
  • 1 teaspoon Vanilla Extract
  • ¼ cups Butter Or Margarine

Preparation

Blend all ingredients in a blender for one minute. Pour into a greased pie plate. Bake at 350 degrees for 45 to 50 minutes.

*Bisquick goes to the bottom, making the crust.
*Coconut goes to the top, creating the topping.
*The middle is custard-like.

DELICIOUS!

Refrigerate any leftovers.
