Description

I came by this recipe from the food section of the local newspaper years ago, and I can tell you that the best thing about this recipe, besides being the EASIEST and BEST tasting strawberry pie you will ever eat, is that it only has a few ingredients in it!

Ingredients

  • FOR THE FILLING:
  • 1 package (4-serving Size) Strawberry Jello
  • 1 package (4-serving Size) Vanilla Flavored Cook And Serve Pudding
  • 1-½ cup Water
  • 1 teaspoon Almond Extract
  • 1-½ pint Strawberries, Hulled And Sliced

  • FOR THE CRUST:
  • ½ cups Butter, Melted
  • 1-¼ cup Flour
  • 3 Tablespoons Powdered Sugar
  • 2 cups Whipped Cream

Preparation

Combine Jello and pudding mixes in a medium saucepan. Stir in water, cook and stir over high heat until mixture comes to a boil. Remove from heat and set aside to cool to room temperature. While it’s cooling, you can make the crust (see below). Once pudding mixture is cooled, add almond extract and stir in sliced strawberries and pour into the crust. Chill until set, about 2–3 hours. Top the pie with whipped cream.

Easy Homemade Buttery Shortbread Crust

Preheat oven to 325 degrees F. In a medium bowl, mix butter, flour and powdered sugar until crumbly. In a 8-inch or 9-inch pie plate, pat crumb mixture evenly across the bottom being sure to come up the sides of the pan to the edge. Crimp the dough with a fork or your fingers. Bake for 20-25 minutes. Cool to room temperature before filling with strawberry mixture.

Yum! What a wonderful blend of flavors! The almond extract caught my eye, as we love the flavor. I also liked the substitution of the pudding mix for corn starch. The addition of the vanilla flavor and creaminess (from the pudding) is wonderful too. The pie crust is super easy to put together and makes a huge difference in the taste. I will definitely make this one again…delicious!
