Description

Adorable, fun and delish. Great for classrooms, offices and Easter tables everywhere!

Ingredients

  • 1 box (18.25 Oz. Size) Cake Mix, Any Flavor
  • 1 cup Water
  • ⅓ cups Oil
  • 3  Eggs
  • 1 container (12 Oz. Size) Vanilla Frosting
  • Green Food Coloring
  • Green Decorator Sugar
  • 18  Marshmallow Easter Peeps
  • 1 bag (about 10 Oz. Size) Easter Egg M&Ms, Any Flavor

Preparation

Preheat oven to 350ºF.

Prepare cake mix according to box directions, using the water, oil, and eggs. Line cupcake tin with wrappers and fill each wrapper 2/3 full with batter. Bake 15-18 minutes at 350ºF (or as directed in the cake mix package).

Allow cupcakes to cool completely. While cooling, tint frosting green using food coloring. Add a few drops coloring and mix in a bowl until it reaches the desired shade of green.

Place bowl of green sugar nearby for decorating, gather Easter peeps, and open the M&Ms.

When cupcakes are cool, frost generously. No one likes skimpy icing. Roll edges in green sugar, and place 2-3 “eggs” on top. Dab the bottom of the peep with icing and place her on top of her eggs.

Arrange on a cupcake stand or on a plate.

Note: Another great option is to tint shredded coconut green, and make a “nest” on top of cupcake for the peep. I avoid coconut because my munchkins won’t eat it.
