Description

Cupcakes topped with chocolate-covered marshmallow bunny heads. Use boxed cake mix to make it easier. A really fun and tasty treat to enjoy with the kids.

Ingredients

  • 1 box (18.25 Oz. Box) Cake Mix Or Cupcake Recipe Of Your Choosing
  • 1 can (16 Oz. Can) White Frosting Or White Frosting Recipe Of Your Choosing, Tinted With Green Food Coloring
  • 1 bag (10 Oz. Bag) Marshmallows
  • 2 bags (1-pound Bag) Chocolate Candy Melts
  • 1 bag (1-pound Bag) White Chocolate Candy Melts Or Royal Icing Tinted The Colors Of Your Choosing For The Faces
  • 1 bag (12 Oz. Bag) Candy Coated Chocolate Easter Eggs Or Jelly Beans

Preparation

Bake cupcakes. Allow to cool. Tint white frosting with green food coloring to look like grass.

To make the bunny heads:

Melt chocolate in the microwave according to package directions. Drop marshmallows one at a time into the chocolate and cover with chocolate until completely coated. Remove with a spoon and place on waxed paper. Use a toothpick to score a circle around the bottom of the marshmallows to make it easier to remove any excess chocolate that drips down. (I got that idea from Bakerella. That is how she does her cake balls. Thank you, Bakerella.)

Allow the chocolate to harden. Use a piping bag or a zip-top bag with a tiny hole cut in the corner, pipe melted chocolate into the shape of ears onto waxed paper. Allow to harden. When the ears have hardened, use melted chocolate to glue them onto the heads. Place on waxed paper and allow to harden.

Pipe some “U” shapes onto waxed paper. This will be for the arms/paws. Allow to harden. Using the melted white chocolate or royal icing tinted the colors of your choosing, pipe faces onto the heads. Allow to harden.

Frost cupcakes with the green tinted frosting to look like grass. Place one head onto the middle of each cupcake. Stick one set of arms/paws into each cupcake in front of each bunny so that it looks like the bunnies are peaking out of the grass. Decorate with Easter eggs or jellybeans.

Make these with the kids and have fun.
