Description

With a hint of lemon, these soft sugar cookies are sure to be a hit!

Ingredients

  • 2 cups Flour, Sifted
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • 2  Large Eggs
  • ¾ cups Sugar (plus Additional For Topping)
  • ⅔ cups Vegetable Oil
  • 2 teaspoons Vanilla Extract
  • 1 teaspoon Lemon Zest

Preparation

Sift flour, baking powder, and salt into a medium bowl and mix well.

Whisk eggs in a large bowl until blended. Add sugar, oil, vanilla, and lemon zest. Mix well. Stir the dry ingredients into the egg mixture until blended. Chill for at least 30 minutes.

Preheat the oven to 400°F.

Drop the cookie dough by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Mist the bottom of a 3-inch flat-bottom glass with water, and dip glass in additional sugar. Press the top of each cookie lightly with the glass to flatten. Mist and dip glass in sugar before pressing each cookie.

Bake until lightly browned, about 8 minutes. Cool on baking sheets for 2 minutes. Remove to a wire rack to cool completely. Store in an airtight container.

These were really easy to make and really good. I candied some lemon zest and sprinkled it on top just as they came out of the oven. Yum!

These cookies are quite yummy! I was expecting something more chewy versus fluffy (if that makes any sense!), but the flavor on these is great.
