Description

Sweet cold and creamy, this pudding has got it all! Perfect for a chocolate craving!

Ingredients

  • ½ cups Granulated Sugar
  • 3 Tablespoons Cornstarch, Sifted
  • ¼ cups 100% Unsweetened Cocoa Powder
  • ⅛ teaspoons Salt
  • 1 cup Fat-free Half-and-half
  • 1 cup Milk
  • 2 ounces, weight Unsweetened Dark Chocolate (99% Cacao)
  • ¼ teaspoons Vanilla Bean Paste Or 1/2 Teaspoon Vanilla Extract
  • Whipped Cream And Chocolate Shavings For Garnish

Preparation

In a small saucepan, whisk sugar, cornstarch, cocoa powder and salt together until combined. Slowly stream in half-and-half and milk, whisking to prevent lumps. Place over medium high heat and whisk until mixture starts to steam. Sprinkle in chopped dark chocolate and continue stirring until it has melted and the pudding has bubbled and thickened. Remove from heat and stir in vanilla bean paste.

Pour into 4 servings dishes. Place plastic wrap directly onto pudding and refrigerate until completely chilled, approximately 2 hours. Remove plastic wrap and top with sweetened whipped cream and dark chocolate.

This recipe is amazing!! I had never made my own pudding before, and this recipe is very fast and easy. I recommend sifting the cocoa powder into the dry ingredients.

When my oldest asked the other day “What is pudding?” in response to seeing the boxed mixes in the store I knew I had to find a good from scratch recipe to share the wonder of pudding with him. I chose this one and was not disappointed! The only changes I made were to sub bittersweet (85%) for the unsweetened and then after tasting it as it started to thicken I added another 2 TBSP of sugar because while the dark taste was just about perfect for me I knew that my littles would prefer something just a tad sweeter. This is definitely a keeper and I’m daydreaming of the flavor variations I can do with this…. (raspberry! orange! mint! …)

Just made this & seriously can’t understand why people go out & buy Jello Instant Pudding. This took less than 10 min to throw together, dirtied the same number of dishes, and left me with an awesome dessert whose ingredients I can name without a pronunciation key. Yum!!

So delicious&easy!! I was even eating the pudding warm out of the pan as I was filling my Mason jars and it was soooo good&chocolate-y!! I love good,rich chocolate so I used Valrona unsweetened cocoa and dark chocolate bar(not 99%,it was 68 I think) and still turned out deep,dark chocolate goodness! Will be spooning copius amounts of whipped cream on top when I serve tonight!

It is easy to prepare and is rich and has wonderful
depth of flavor. I used regular real vanilla flavoring
