Description

The cinnamon and sugar coating of Snickerdoodles makes vanilla pudding and berries happy in this layered dish. I had a couple dozen bonus Snickerdoodles, when I “accidentally” softened double the butter for my recipe. What to do? Improvise.

Ingredients

  • 15 whole Baked Snickerdoodle Cookies, I Used The Betty Crocker Recipe, 2 Versions, Gluten Free And Regular
  • 3 cups Berries, I Used Blueberries And Raspberries
  • 1 box Vanilla Pudding, Prepared (I Used Trader Joe's 4 Oz, Vanilla, But A 3.4 Or 6 Oz. Box Of Jell-o Pudding Would Work)
  • Milk, As Directed On Pudding Directions

Preparation

In the bottom of a clear trifle dish, I crumbled 4 cookies. On top of that I put a layer of pudding, then a layer of berries. Laid whole cookies to cover berries. Repeat twice. Top with pudding, one or two crumbled cookies in the middle and a few of the remaining berries. Looks impressive for company. Easy peasy.

If you’ve never made snickerdoodles, they are fantastic. My Betty Crocker has a great recipe, but there are also several good ones online. My 6-year-old enjoyed rolling the dough in his hand and then in the cinnamon-sugar mixture. I encourage you to underbake slightly. Most of the recipes I’ve seen ask for too long a bake time.
