Description

This nostalgic sweet and fluffy candy is sure to bring a smile on anyone’s face!

Ingredients

  • 1-½ cup Granulated Sugar
  • ⅓ cups Warm Water
  • ¼ cups Light Corn Syrup
  • 1 whole Egg White
  • 1 teaspoon Vanilla Extract
  • ½ cups Chopped Pistachios, Unsalted And Shelled

Preparation

Combine the sugar, water and corn syrup in a heavy bottomed pot and bring to a boil. Stir until the sugar dissolves and then don’t stir again. Boil for about five minutes—until the sugar’s temperature reads 250 degrees F on a candy thermometer OR forms a hard ball when dropped in a little cool water.

Meanwhile, beat an egg white using a Kitchen Aid electric mixer until soft peaks form. When the sugar is ready, slowly stream it into the egg white with the mixer on high. Add the vanilla. Continue to beat for another five minutes, until the mixture is very thick and shiny.

Fold in the nuts and spread out into a foil-lined (and sprayed) nine inch square pan. Let cool for about thirty minutes before cutting into small squares.

Oh finally! My dear Mom made divinity often, and try as I might……I have not been able to get the dollops all out before the mix gets too ‘dry’ like she did. Your recipe……I CAN do that. Thanks for bringing back good memories for me,

I agree with sweetns56 – my family & I were just talking about Divinity . . . there are 2 recipes that are even different from yours . . . one hasn’t been made since Great Aunt June passed her recipe on. I’m suppose to attempt to make it in the next couple of weeks. :)

So weird your recipe would be here today, my daughter and I were just talking about making divinity. I make candy, but I’ve always been afraid to try my hand at divinity. I would watch my my mother make it & it looked daunting. She always told me you need a bright clear sunny day for it to set up.

I’m scared to make divinity. I heard it was the hardest candy to make. I love it though. I can only get it at the grocery store since I am to chicken to try to make it.

I make this exact recipe every year! Love, love, LOVE divinity, but there have been very, very few of my friends who have ever even heard of it. Needless to say, I was surprised – but delighted – to see your recipe. Thanks for posting. :)
