Description

These cookies don’t have raisins, but they do have pecans and coconut and lots of sugar!

Ingredients

  • 1 cup White Sugar
  • 1 cup Brown Sugar
  • 1 cup Canola Oil
  • 2 whole Eggs, Beaten
  • 1 cup Shredded Coconut
  • 1 cup Chopped Pecans
  • 2 cups 3-minute Oatmeal
  • 2 cups Unsifted Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 pinch Salt

Preparation

Mix all ingredients together in a large bowl (add a little water if the dough is too dry). Form into balls about the size of walnuts. Roll them in white or colored sugar. Bake on a greased cookie sheet at 350 degrees for 12-15 minutes.

Makes about 5 dozen.

Ohhh, these sound good. I’ve never had oatmeal cookies with coconut, but hubby would LOVE that!

The size of walnuts? I hesitate when recipes call for the dough to be that small. We like our cookies big and hearty not small and bite size. The recipe looks good but I think I’m going to try it making the cookies bigger than walnuts.

They turned out pretty good. I realized the size of walnuts is the size of a whole walnut still in it’s shell. :) I ran out of walnuts so I used chocolate chips and it turned out pretty good I opted to not roll them in the sugar on the choc chip ones
