Description

Flakey flour crust bars with apricot and brown sugar topping.

Ingredients

  • ⅔ cups Dried Apricots
  • ½ cups Soft Butter Or Margine
  • ¼ cups Granulated Sugar
  • 1-⅓ cup Sifted All-Purpose Flour
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Salt
  • 1 cup Brown Sugar, Packed
  • 2 whole Eggs, Well Beaten
  • ½ teaspoons Vanilla Extract
  • ½ cups Chopped Walnuts
  • Confectioners Sugar

Preparation

Rinse apricots; cover with water; boil 10 minutes. Drain them, then cool and chop.

Heat oven to 350 degrees F. Grease an 8x8x2-inch pan.

Mix butter, granulated sugar and 1 cup flour until crumbly. Pack into pan. Bake 25 minutes.

Sift remaining 1/3 cup of flour, baking powder and salt.

Gradually beat brown sugar into eggs; mix in flour mixture, then vanilla, nuts and apricots. Spread over the baked layer. Bake 30 minutes, or until done (toothpick comes out only slightly moist).

Cut into bars. Sprinkle with confectioners’ sugar.Yields about 16 pieces….
