I found this recipe on a website and exchanged a few ingredients to make it fit my pantry. And everyone I make it for LOVES it! Hope you and yours enjoy it too. Oh… you have to, have to, have to use the heavy whipping cream… You’ll thank me later, promise!
First, preheat oven to 350F.
Now, prepare your brownies. Combine 1 stick melted butter, 1 cup sugar, 1 whole egg, 1 teaspoon vanilla, and 1/4 cup cocoa powder in mixing bowl. Mix well and then stir in flour. Add chocolate chips and then spread the mixture into an 8×8 baking pan (sprayed or buttered) and bake for about 20-25 minutes. These brownies have a thicker batter than most box mixes and the center will not be set when you take them out. Don’t worry, it will set later.
Now, prepare your pudding.
In a 4 quart sauce pan combine 2 1/2 cups milk, 1 cup sugar, 1/4 cup cocoa, 4 Tablespoons corn starch, and 3 egg yolks. Continue stirring, on medium-high heat, until the pudding just starts to thicken. Remove from heat and stir in 1 teaspoon vanilla and 3 Tablespoons of room temperature butter. Stir until butter melts. Pour into a bowl and cover it, then refrigerate until cold.
Now, prepare the whipped cream. Homemade whipped cream is a MUST!
In a large mixing bowl combine 2 cups heavy whipping cream and 3 Tablespoons of sugar. Whip with an electric mixer for approximately 5 minutes until cream is thick and forms peak.
After everything is completely cool cut the brownies into bites (or crumble them if you want) and layer all of the components (pudding, whipped cream and brownies) in a serving bowl or in small ramekins. You can also put a little shaved chocolate on top for some added flair!
