Description

Don’t let the name fool you. You don’t have to love dates to love these cookies.

Ingredients

  • FOR THE FILLING:
  • 1 cup Pitted Dates, Cut Into Small Pieces
  • 1-¾ cup Canned Apricots, Cut Into Small Pieces
  • ½ cups Brown Sugar
  • 2 Tablespoons Apricot Juice
  • _____
  • FOR THE DOUGH:
  • ¾ cups Butter, Melted
  • 1 cup Brown Sugar
  • 1 teaspoon Vanilla
  • 2 cups Flour
  • 1 teaspoon Baking Soda
  • 2 cups Quick Oats

Preparation

Filling: Combine the dates, apricots, brown sugar and apricot juice in a saucepan. Bring to a boil and boil until thickened, approximately 5-8 minutes. Remove from heat.

Dough: Mix together the butter and brown sugar. Add vanilla and blend. Add flour, soda and oats and mix well. (This can be done while the filling is boiling.)

Pour half of the dough into a 9 x 13 pan. Spread over the bottom and pat down lightly. Pour filling over this base and spread to cover. Sprinkle the other half of the dough mixture over the filling. Pat down lightly.

Bake at 350 degrees for approximately 25-30 minutes.

I love date bars so I was excited to try this recipe with apricots- They were delicious! I added some powdered sugar on the top just for fun! I look forward to making these again! Thanks!
