Description

Banana bread meets a healthy cookie that is loaded with salted peanuts, dark chocolate and banana chips.

Ingredients

  • 1 whole Banana, Peeled And Mashed
  • 1 cup Nonfat Greek Vanilla Yogurt
  • ¾ cups Brown Sugar
  • ¼ cups Sugar
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • 1 cup Whole Wheat Pastry Flour
  • 1-½ cup Rolled Oats
  • 1 teaspoon Ground Cinnamon
  • 2 teaspoons Baking Soda
  • ¼ teaspoons Sea Salt
  • ½ cups Salted Peanuts
  • ½ cups Chocolate Chips
  • ½ cups Banana Chips

Preparation

Preheat oven to 375 F. Line a cookie sheet with a Silpat mat or parchment paper.

In the bowl of a stand mixer blend banana, yogurt, and both sugars until well combined. Add in egg and vanilla. Mix well and scrape down sides of bowl.

In a separate bowl combine flour, oats, cinnamon, baking soda, and salt. On low speed add the dry mixture to wet mix and combine well.

Fold in peanuts, banana chips, and chocolate chips until mixed through.

Drop onto prepared cookie sheet in tablespoon sized scoops, leaving an inch or two between each. Bake for 8-11 minutes, until cookies are golden on the outside.

Remove from oven and let them cool on the pan for 5 minutes. Then remove to a wire cooling rack to cool completely.

* They may look under cooked, but they will set up more as they cool. These are super soft cookies as they are, more like a breakfast cookie and banana bread combined!
