Wash and pit the cherries. Put pitted cherries, coconut milk, honey and pure almond extract into the bowl of a food processor or blender. (A food processor will give a chunkier textured puree and a blender will give a smooth texture—it’s a matter of preference.) Blend until desired texture is reached.
Process in a 2-quart ice cream maker according to manufacturer’s instructions. This should take about 20 minutes.
Serve immediately or place in the freezer for a few hours for a firmer consistency.
