Description

This cookie recipe has been in my family for years and makes an appearance every time we are together!

Ingredients

  • ⅔ cups Margarine
  • ⅔ cups Crisco
  • 1 cup Sugar
  • 1 cup Brown Sugar, Packed
  • 2 whole Eggs
  • 2 teaspoons Vanilla
  • 1 teaspoon Baking Soda
  • 1 teaspoon Kosher Salt
  • 3 cups All-purpose Flour
  • 6 ounces, weight Butterscotch Chips
  • 6 ounces, weight Chocolate Chips
  • ¼ cups Shredded Coconut

Preparation

Preheat oven to 375°F.

In a large standing mixer, combine margarine, Crisco, sugars, eggs, and vanilla. Blend thoroughly.

In a separate bowl, sift together baking soda, salt and flour.

Turn mixer on low and slowly add dry ingredients. Once thoroughly combined (about 2 minutes), let sit for a few minutes.

Add butterscotch, chocolate chips and coconuts. Mix on low for about 30 seconds or until combined. Portion out dough on a baking sheet and bake for 8 to 10 minutes.

Makes about 3 dozen (depending on how much cookie dough you eat!). Enjoy!

never really had much luck in using shortening in cookie recipes. but, i still gave it a shot. did not have the same awesome-looking results as the picture depicts so maybe i did something wrong. i may just use butter the next time. flavor was fine. cookies did not bake evenly which was weird – they were really well done on the outside and still light-colored and under-done looking on the inside.
