Pour chocolate chips into a microwave safe bowl and microwave for 15 seconds. Stir and add the oil. Use more oil if needed to reach a smooth, slightly thinned consistency. Continue to microwave in 15-second intervals, stirring in between each interval, just until chocolate is melted and smooth.
In a separate bowl, stir together peanut butter and cereal. (Amounts are approximate. Just add enough cereal to hold the peanut butter together, or more to taste.) Using 2 spoons (peanut butter will be sticky), form small balls of the peanut butter mixture and dip into the melted chocolate. Place on a sheet of wax paper to harden. Place chocolate peanut butter balls in the refrigerator to finish hardening. Don’t expect them to be perfectly round. Mine weren’t.
Optional: While chocolate is still wet, decorate with chopped peanuts, sprinkles, toasted coconut, etc. These could also be made with almond butter, vegan chocolate chips, white chocolate, etc.
