Description

Coconut water, oil and milk have been getting a lot of attention lately. This fruit does have lauric acid which is a wonderful antioxidant and also contains antimicrobial properties. Unfortunately, coconut is very high in saturated fat, the kind that can cause inflammation, increase your cholesterol, and lead to heart disease. So what is a person to do? Practice moderation. Ingredients

  • 12 ounces, fluid Low Fat Unsweetened Evaporated Milk
  • 14 ounces, fluid Lite Coconut Milk
  • ½ cups Powdered Sugar
  • ½ teaspoons Ground Cinnamon
  • 1 teaspoon Pure Vanilla Extract
  • ½ cups Coconut Meat, Unsweetened And Shredded
  • 8 whole Popsicle Sticks, For Assembly

Preparation

Whisk all ingredients together in a large bowl with a spout. Pour the mixture into 8 individual popsicle molds, insert sticks and freeze overnight. Enjoy!
