Description

This is a cake I grew up with. My mom used to make this all the time for a snack. This chocolate cake is moist and very delicious. It needs no frosting, just a sprinkle of powdered sugar. If you prefer to frost it, a light vanilla or butter cream frosting would work great.

Ingredients

  • 3 cups Unbleached Flour
  • 2 cups Granulated Sugar
  • 1 teaspoon Kosher Salt
  • 6 Tablespoons Cocoa Powder
  • 1 teaspoon Baking Soda
  • 2 teaspoons Pure Vanilla
  • 2 Tablespoons Apple Cider Vinegar
  • 10 Tablespoons Canola Oil
  • 2 cups Water
  • Powdered Sugar, To Sprinkle On Top (optional)

Preparation

Preheat oven to 350ºF.

This is a “mix in your pan” cake. That is what makes it an easy and quick dessert! No need to grease the pan!

In a 13×9 pan, place all you dry ingredients; mix until combined. Make 3 round wells with a fork in your mix. In one well place the vanilla, the vinegar goes into the second and the oil the third. Over the top pour your water and mix with your fork working the bottom and sides of the pan to make sure you get all the dry ingredients and everything is completely mixed.

Place in a 350ºF oven and bake 25–35 minutes or until cake springs back and a toothpick comes out with light crumbs. Let cool in the pan and sprinkle with powdered sugar.

I love that it doesn’t call for 2 sticks of butter lol As delicious as butter is! Thanks i can’t wait to try it!

At our house it is called Goofy Cake and it is always popular. As an added bonus it is great for those who have milk or egg allergies.
