Description

Soft and moist cake-like muffins, studded with tart cranberries. The perfect cold weather treat!

Ingredients

  • 2-¼ cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Pumpkin Pie Spice
  • ½ teaspoons Salt
  • 2 whole Eggs
  • 1-½ cup Sugar
  • ½ cups Brown Sugar
  • 1 cup Pumpkin Puree Or Canned Pumpkin
  • ½ cups Vegetable Oil
  • 1 cup Fresh Or Frozen Cranberries, Chopped

Preparation

In a bowl, combine the first four ingredients (flour, baking soda, pumpkin pie spice, salt). In a mixing bowl, beat the eggs and sugars; add the pumpkin and oil and mix well. Stir into the dry ingredients just until moistened. Fold in the cranberries.

Fill foil-or paper-lined muffin cups three-fourths full. Bake at 400 degrees F for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

These are super delicious muffins! I want to try them again with some applesauce instead of all of the oil.
