Description

This recipe is a healthy cookie loaded with goodies!

Ingredients

  • 1 cup Dried Cranberries
  • ½ cups Orange Juice
  • ½ cups Sugar
  • ½ cups Brown Sugar
  • ¼ cups Butter
  • 2 Tablespoons Honey
  • 1 whole Egg
  • 1 cup Flour
  • ½ cups Whole Wheat Pastry Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • 3 cups Oats
  • ⅓ cups Chopped Walnuts
  • 1 Tablespoon Grated Orange Rind
  • ½ cups Chocolate Chips

Preparation

Preheat oven to 350°F. Prepare baking sheets (spray with cooking spray).

Combine cranberries and orange juice in a bowl; cover and let stand 10 minutes.

Beat the sugars and butter at medium speed with a mixer until light and fluffy. Add honey and egg; beat well. Stir in the cranberry mixture.

Combine flour, baking soda, baking powder, and salt in a bowl, stirring well with a whisk. Add the oats, walnuts, and orange rind; stir well. Add to the sugar mixture; stir until well-blended. Stir in chocolate chips.

Drop by level tablespoonfuls 2 inches apart onto baking sheets coated with cooking spray. Bake at 375°F for 8 minutes or until almost set. Cool on a wire rack.
