Description

A perfect cookie for the holidays or anytime.

Ingredients

  • 1 cup Brown Sugar
  • ¾ cups Granulated Sugar
  • 3 Tablespoons Freshly Grated Orange Zest
  • 2-½ sticks Butter, Softened
  • 2 Tablespoons Honey
  • 4 Tablespoons Freshly Squeezed Orange Juice
  • 2 whole Eggs
  • ½ teaspoons Almond Extract
  • 1 teaspoon Orange Flavoring
  • 2-½ cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 cup Slivered Almonds, Toasted
  • 3 cups Fresh Cranberries, Roughly Chopped

Preparation

Preheat oven to 350 F.

In a large mixing bowl, add sugars and orange zest and rub together to distribute the oils from the zest. Add butter and cream together the butter and sugars until light and fluffy. Add honey and orange juice and mix until combined. Add eggs, one at a time and mix just until blended. Stir in almond extract and orange flavoring.

In a separate bowl, whisk together flour, baking powder and salt. In stages, add the dry ingredients into the butter mixture and mix only until incorporated.

Take almonds in your hands and gently crush them so that the pieces are a little broken. Fold cranberries and almonds into batter.

Drop by rounded tablespoon full onto parchment lined cookie sheets.
Bake in a 350 F oven for 11-13 minutes.

Very good cookies but I feel the prep time indicated, 10 minutes, is about half correct. Also the yield for me was 48 large cookies.
