Description

Healthier dessert bar with orange, cranberry, oats, and nuts.

Ingredients

  • 1 cup Dried Cranberries
  • ¼ cups Orange Juice
  • 1-½ cup Flour
  • 1-½ cup Oats
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Salt
  • 1-½ stick Butter
  • 1-½ cup Brown Sugar
  • 2 whole Eggs
  • 1 teaspoon Cinnamon
  • 1 cup White Chocolate Chips
  • ½ cups Chopped Walnuts Or Pecans

Preparation

Preheat oven to 350F.

Add cranberries and orange juice in bowl and microwave for 40 seconds and then set it aside to rest.

Mix flour, oats, baking powder and salt in large bowl. Set aside.

In a mixing bowl add butter and brown sugar. Beat until fluffy. Add 1 egg at a time and beat until creamy. Now add flour/oat mixture a little at a time and beat on low speed until blended well. Add cinnamon, cranberry mixture, white chocolate chips, and nuts and mix slowly with mixer or stir by hand.

Spread the mixture into a 9×13 baking pan (I like Pampered Chef stone pans). Bake for 25-30 minutes until top is lightly browned and middle is set.

These are delicious! I first made them for my boyfriend’s mum because I knew she liked white choc and cranberries and now she’s my mother-in-law so they must have worked!

These are G, double O, D, GOOD! I had a bag of cranberries begging to be used, and I didn’t want to make plain old cranberry white chocolate cookies. These caught my eye, and I am so glad they did. I was a little concerned about the cinnamon, but it works. Thanks for sharing.
