This cake is a rich, chocolate, coffee, and cinnamon symphony for your mouth. As if that’s not enough, it’s incredibly simple to whip together on a moment’s notice, and doesn’t dirty many dishes!
Stir together the flour, 1 1/2 cups sugar, cocoa, soda, and salt in an ungreased 12×8 baking pan.
Make 3 wells in the dry mixture; pour oil in one, vinegar in one, and vanilla in one.
Pour in coffee, then stir everything together with a fork until well mixed. Spread into an even layer.
Combine 1/3 cup sugar and cinnamon; sprinkle half over the batter.
Bake in a 350F oven for 35 to 40 minutes. Sprinkle remaining cinnamon-sugar mixture over hot cake. Cool 15 to 20 minutes before cutting.
Makes 6 to 8 servings.
