Description

These cookies are so good and everyone loves them. Oats and Chocolate chips really do the trick. You can even make the dough and save it for some other day and then bake them.

Ingredients

  • 1 cup White Sugar
  • 1 cup Brown Sugar
  • 2 whole Eggs
  • 1 cup Butter
  • 1 teaspoon Vanilla
  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 2-½ cups Rolled Oats
  • 2 cups Semi-Sweet Chocolate Chips

Preparation

(1) Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets.

(2) In a large bowl add, White sugar, brown sugar and eggs. Melt butter and pour in bowl with above ingredients. Add vanilla and mix on medium speed. Sift Flour, baking powder, baking soda and salt. Sift into the bowl. Mix. Scrape the sides with a bowl scraper. Mix again. Take beaters out and add oats, stir in with a big spoon. Then add chocolate chips, stir in with spoon.

(3) Roll balls into walnut sizes and bake for 15-17 minutes. (note. They may look under cooked but let them cool and they harden.)

Made these tonight and they were a hit with everyone!! I’ve tried a lot of different Cowboy cookie recipes…. But your is absolutely the BEST!!!! Thanks!
PS. I tried to rate it 5 stars but the little rating mitts didn’t budge.

Yummy! Mine turned out a little crispy and thin because I didn’t have enough oatmeal. But they were still delicious!

These are now my “go-to” cookie. Easy ingredients (I always have all this stuff on hand) and quick to make. I add 1 tablespoon or so of espresso powder and call them Cowboy Cookies with a Kick. Love them a bit too much.
