Description

This is my mom’s recipe and it was and still is one of my favorites. I remember walking home from school for lunch in the Winter and smelling this pudding when I walked in the door… My mom always served this warm out of the oven with the warm custard sauce. It is a basic recipe but oh so many memories. Maybe that’s why I like it so much!!

Ingredients

  • FOR THE PUDDING:
  • ¼ cups Shortening
  • ⅔ cups Sugar
  • 1 whole Egg
  • 1-½ cup Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • ½ cups Milk
  • 1 teaspoon Vanilla
  • _____
  • FOR THE CUSTARD SAUCE:
  • 3 Tablespoons Custard Powder
  • 3 Tablespoons Sugar
  • 2-½ cups Mlk
  • 1 teaspoon Vanilla

Preparation

For the pudding: Cream shortening and sugar together then add egg and mix well. Combine the dry ingredients. Mix well and add to egg mixture alternately with milk. Add vanilla. Mix well and pour into a greased 8 x8 square cake pan and bake 30 -35 minutes at 350 degrees F until a toothpick inserted comes out clean.

Custard Sauce: Mix the custard powder with the sugar in a large saucepan. Add the milk and cook over medium-high heat, stirring frequently until well blended and starts to thicken. Add vanilla and stir. Remove from heat and serve over warm pudding.
