Description

I found this cookie recipe buried in one of my grandma’s recipe boxes. It is a moist cookie with just a hint of coffee flavor plus a yummy penuche frosting. (Not sure what that means, but grandma had it written on her recipe card). These are always a hit at bake sales and parties.

Ingredients

  • FOR THE COOKIES:
  • 2 cups Brown Sugar
  • 1 cup Butter
  • 2 whole Eggs, Beaten
  • 1 teaspoon Vanilla
  • 1 cup Strong Coffee, Cooled
  • 4 cups Flour, Sifted
  • 3 teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 cup Chopped Nuts (optional)

  • FOR THE PENUCHE ICING:
  • ½ cups Butter
  • 1 cup Brown Sugar, Packed
  • ½ cups Milk
  • 2 cups Confectioners Sugar

Preparation

For cookies:
Cream sugar and butter. Add eggs and vanilla. Sift together the flour, baking powder and salt. Into the creamed mixture, add dry ingredients alternately with coffee. Fold in nuts if desired. Drop by spoonfuls onto a lightly greased cookie sheet and bake at 400 degrees for 8-10 minutes.

For Easy Penuche Icing:
Melt 1/2 cup butter. Add 1 cup brown sugar. Boil over low heat for 2 minutes, stirring constantly. Stir in 1/2 cup milk. Stir until it comes to a boil. Cool to lukewarm. Gradually add 1 1/2 – 2 cups confectioner’s sugar and beat until spreading consistency is reached. Add more milk or sugar as needed.

Note: I usually bake the first half of the cookies without nuts then add 1/2 cup of nuts to the remaining batter before baking.

These are AMAZING! I made them for all my teacher friends and they LOVED them! Had 15 of them ask for the recipe!

These look like something my hub would love! I got to wondering about penuche too, I remember seeing it in my mom’s cookbooks. A quick google suggests that it is brown sugar fudge, which is just like the icing. I need to try these.

I made these cookies today. The recipe is excellent. The cookies came out very moist. These are more like little round cakes than cookies. This would make a great whoopie pie recipe. Perhaps subbing chocolate for the coffee flavor. I’m giving the cookies a four because…I didn’t super duper love them. I think that’s just me because the recipe works perfectly and bakes beautifully.

The penuche frosting is definitely a 5 star. It’s fantastic. Wonderful caramel flavor. It would be great on any cupcake or drizzled over a bundt cake.
