Coconut mascarpone cream parfaits, made with angel food cake, strawberries and blueberries.
Cut the cake into 1/2-inch bite-sized pieces.
To make the cream, in the bowl of an electric mixer combine the mascarpone cheese and coconut milk and mix until smooth. Add the whipping cream, coconut extract and powdered sugar and mix on medium high for 1-2 minutes until stiff peaks form. Then fold in your coconut flakes.
Then you are ready to construct your parfaits. Using a tall glass, layer angel food cake, the cream, strawberries, cream, blueberries, cream and repeat until you reach the top of the glass.
