Description

Gluten free or not, this cake will ROCK YOUR FACE OFF! Pair it with vanilla ice cream and your family will love you forever. *Slobber*

Ingredients

  • 1 cup Unsweetened Applesauce
  • ⅓ cups Honey
  • ½ cups Kefir (buttermilk)
  • ½ cups Coconut Oil, Melted
  • 3 whole Eggs
  • 1 Tablespoon Vanilla Extract
  • ½ cups Coconut Flour
  • ½ cups Cocoa Powder
  • ½ teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • ½ cups Chocolate Chips

Preparation

In a small saucepan over low heat, heat the applesauce and honey only until combined. Do not get the mixture hot – you only want the two ingredients to blend well.

In a mixing bowl, combine the kefir, melted coconut oil, eggs, and vanilla. Stir in the applesauce mixture.

Add the coconut flour, cocoa powder, baking powder, baking soda, and salt. Stir with a whisk until combined.

Pour into a greased 8 inch baking dish. Sprinkle top with chocolate chips.

Bake at 350 degrees F for 33-35 minutes or until a toothpick inserted in the center comes out clean.
