Description

A fabulous cookie with coconut, oats and chocolate chips!

Ingredients

  • ½ cups Butter, Softened
  • ½ cups Vegetable Oil
  • 2 whole Eggs
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 1 teaspoon Vanilla Extract
  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 cup Coconut
  • 1-½ cup Oats
  • 1-½ cup Chocolate Chips

Preparation

Preheat oven to 350 degrees. In a large mixing bowl add butter, vegetable oil and eggs. Beat with an electric mixer until light and fluffy. Add sugars and vanilla, beating until well combined. Add flour, baking soda, baking powder, salt, coconut, and oats; beat until combined. Stir in chocolate chips. Using a medium size cookie scoop or rounded tablespoon, drop onto a greased or lined baking sheet about 2 inches apart. Bake for 12-14 minutes or until lightly browned. Remove from the oven and cool for a few minutes on the cookie sheet before moving to a wire rack to cool.

If you don’t bake them too long, they are actually crunchy around the outside and chewy in the middle, the best of both worlds!

I’m wondering if the oil makes for a crunchy versus a chewy type cookie?

We loved these cookies….thank you for the recipe!
I used fresh coconut and chocolate chunks instead of the chocolate chips….yummy!
