Description

This recipe gives your banana bread recipe a break! Just as delicious and just as comforting!

Ingredients

  • FOR THE BREAD:
  • 4 whole Eggs
  • 2 cups Sugar
  • 1 cup Vegetable Oil
  • 2 teaspoons Coconut Extract
  • 2 cups All-purpose Flour
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 cup Coconut Milk Or Buttermilk
  • 1 cup Shredded Coconut, Sweetened
  • FOR THE GLAZE:
  • ½ cups Sugar
  • ¼ cups Coconut Milk (or Water)
  • 1 Tablespoon Butter
  • 1 teaspoon Coconut Extract
  • ¾ cups Shaved Coconut, Sweetened

Preparation

Preheat your oven to 350°F. Spray two loaf pans with cooking spray and set aside.

In a large bowl, mix your eggs together. Add in sugar, oil and coconut extract and beat well. In a medium bowl whisk together flour, salt and baking soda. Add that to your sugar mixture, alternating with the coconut milk. Stir in shredded coconut. Divide mixture evenly between the two loaf pans.

Bake for 50-60 minutes or until an inserted toothpick comes out clean. Let it cool for 10 minutes.

In a sauce pan over medium high heat, stir together sugar, coconut milk and butter. Bring to a low boil. Stir constantly while cooking for 1 minute. Remove from the heat. Stir in the coconut extract and then pour the glaze over both loafs. Sprinkle the loaves with shaved coconut and let them cool for 20 minutes. Remove bread from pans and serve.

I made this bread and at first bite I thought was rather bland but I let it sit overnight and the next day it was out of this world good. It seemed to pick up all the coconut flavors and was really moist. Just perfect! Try it you’ll love it.

This was amazing. I used coconut oil instead of vegetable oil, but that was the only change I made. Good stuff!
