Description

These are like the perfect hybrid of a flaky shortbread cookie and a caky blondie. It has the incredible caramel flavor from the brown sugar and butter, the texture and flavor of the coconut, the crunch of buttery macadamia nuts and the smooth and creamy white chocolate.

Ingredients

  • 2-⅔ cups All-purpose Flour
  • 2 cups Brown Sugar
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 2 cups Shredded Sweetened Coconut
  • 1 cup Butter, Cut Into Chunks
  • 12 ounces, weight White Chocolate Chips
  • 1-½ cup Macadamia Nuts

Preparation

Preheat the oven to 350ºF. Prepare a 9×13” pan with baking spray.

In the bowl of a food processor, combine all of the dry ingredients and the coconut. Add the butter and pulse until crumbly.

Add the crumbly dough to the prepared pan.

By hand, mix in the white chocolate chips and macadamia nuts.

Flatten the dough with a heavy spatula. Bake the bars for about 40 minutes. The bars will be golden brown on the top.

Let the bars cool completely. When they are all the way cooled, sprinkle with powdered sugar.

Slice (with a very sharp knife!) into bars and serve!
