This refreshing chopped salad was so tasty, my girls and I were fighting over the last serving. If you’ve never had jicama, it’s a slightly sweet, mild flavored, very moist and very crunchy root vegetable from Mexico. It’s also very high in fiber and Vitamin C. I can buy precooked barley in the freezer section of my grocery store. If you can’t find the precooked variety, I share simple cooking instructions below.

Cocoa and Cream Cake

Recipe Description

My update of wacky cake (the chocolate cake my grandma used to make that had no eggs, milk or butter) but I added tunnels of cream cheese and chocolate chips.

Preparation Instructions

Preheat oven to 350 degrees F and coat an 9 x 13” baking pan with cooking spray.

Prepare the batter. Whisk together flour, sugar, cocoa powder, baking soda and salt. Pour oil, vinegar, vanilla and water into dry ingredients and stir until smooth. Spread the batter in prepared pan.

In another mixing bowl, beat together cream cheese and 1/4 cup sugar. Beat in egg and mix completely. Stir in chocolate chips. Drop spoonfuls of cream cheese mixture over batter. Bake in a 350-degree oven for 30 to 35 minutes.

Let cake cool in the pan for about 30 minutes before cutting.

FOR THE BATTER:
1-½ cup All-purpose Flour
1 cup Sugar
⅓ cups Cocoa Powder, Natural Not Dutch Process
1 teaspoon Baking Soda
½ teaspoons Salt
⅓ cups Vegetable Oil
1 Tablespoon White Vinegar
1 teaspoon Vanilla
1 cup Water

FOR THE CREAM CHEESE MIXTURE:
8 ounces, fluid Cream Cheese, Softened
¼ cups Sugar
1 whole Egg
1 cup Chocolate Chips

Delightfully delicious! Just made them and loved the fact that I already had most of the ingredients on hand. Easy and fast! Loved the cream cheese filling.

Awesome! Whenever my sister and I get together, we bake boxed cream cheese brownies and watch movies. These have officially replaced the boxed version. The cake is rich and moist and the cream cheese is out of this world. Pairs well with a mug of coffee or a tall glass of milk.

Wow! I just made this for my husband’s birthday today. He, my 2 kids and I gave it a HUGE thumbs up. It’s so moist, perfectly chocolately and just the right balance between the cream and the chocolate. I will be making this a LOT, it’s made it’s way into my personal recipe binder of family favorites
