Description

Delicious and easy lime and coconut bars that will make you want to go on vacation, get a tan and sing Barry Manilow.

Ingredients

  • 1 package Refrigerated Sugar Cookie Dough (16.5 Oz.)
  • 8 ounces, weight Cream Cheese, Softened
  • ½ cups Granulated Sugar
  • 1 whole Egg
  • ¾ teaspoons Coconut Extract
  • 2 teaspoons Lime Zest
  • ⅓ cups Sweetened Shredded Coconut

Preparation

Preheat oven to 350 degrees F. Spray a 9×9 square pan with non stick cooking spray.

Press sugar cookie dough into bottom of greased dish and set aside.

In a large bowl, whip cream cheese with sugar and egg. Scrape edges and whip again. Stir in coconut extract and lime zest. Spread mixture over top of cookie dough to form an even layer and top with coconut.

Bake 20 minutes or until coconut is lightly toasted and cream cheese mixture is set. Cool to room temperature, cover with plastic wrap and refrigerate until completely chilled. Cut into bars and serve.

I made so many changes I can’t fairly give it a rating…Rather than buying sugar cookie dough and coconut extract just for this, I made shortbread dough using coconut oil instead of butter. Then I used neufchatel cheese with lime zest and lime juice and the egg and sugar. I also sprinkled some sweetened shreeded coconut on top before baking.

It was…delicious! I HIGHLY recommend making shortbread instead of buying sugar cookie dough. So much cheaper and so easy. The neufchatel made it a but creamier than the photo, so next time I’ll use actual cream cheese. Still…so so good.

I love you, but I hate you for this!!! I cannot make it again until after bikini season is over! I ate almost the whole pan by myself!! Soo good!!!

These were wonderful! The only thing I switched was I made a graham cracker crust rather than sugar cookie – just a personal preference – and they were fabulous! They were sort of like a key lime cheese cake. Next time I’d like to add a little lime juice for some extra zing. Delicious and easy and I am NOT a baker.

These are very good! I was a little concerned about the bake time, I ended up cooking them about 15 minutes longer (and even then, the cream cheese was not completely set). It did firm up out of the oven though and once refrigerated, they were fine!

my mom is a coconut fanatic so I made these for her for Mother’s Day- she LOVED them and so did everyone else, what a great mix of bright flavor!! Can’t wait to make them again!

These were delicious! I made them for Easter dinner and church and they were a big hit. I made a double batch, so I had to cook about 12-15 minutes longer to get the whole pan to set, but they turned out beautifully.
