Description

These cookies are really soft, airy, and delicious, and the icing is super simple but really makes the whole cookie even better. All of the fresh citrus juice and zest makes the whole cookie pop.

Ingredients

  • FOR THE COOKIES:
  • ⅔ cups Shortening
  • ¾ cups Sugar
  • 1 whole Egg
  • 1 Tablespoon Lemon Zest
  • 1 Tablespoon Lime Zest
  • 1 Tablespoon Orange Zest
  • 2 cups Flour
  • ½ teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • ½ cups Fresh Squeezed Juice (mix Of Lemon, Lime, And Orange)
  • FOR THE GLAZE:
  • 2 cups Powdered Sugar
  • 1 teaspoon Vanilla
  • 1 teaspoon Lemon Zest
  • 1 teaspoon Lime Zest
  • 1 teaspoon Orange Zest
  • ¼ cups Fresh Squeezed Juice (mix Of Lemon, Lime, And Orange)

Preparation

Preheat oven to 400°F.

In a large bowl, cream together the shortening and sugar. Beat in the egg, then stir in the zest.

In a separate bowl stir together the flour, baking powder, baking soda, and salt. Alternate adding dry ingredients and the juice to the shortening/sugar mixture.

Drop the dough on ungreased baking sheet by the spoonful. Bake at 400°F for 6-8 minutes.

Take the cookies out of oven and remove to wire racks.

For the icing, mix powdered sugar, vanilla, fresh zest, and fresh squeezed juice together until combined. Spoon the glaze onto the cooled cookies and serve.
