Description

Super moist coffee cake with a beautiful cinnamon swirl in the middle.

Ingredients

  • 2 sticks Butter
  • 2-¼ cups Sugar, Divided
  • 2 whole Room Temperature Eggs
  • 1 cup Sour Cream
  • 1 teaspoon Vanilla Extract
  • 2 cups All-purpose Flour
  • 1 Tablespoon Baking Powder
  • ¼ teaspoons Salt
  • ¼ teaspoons Baking Soda
  • 3 Tablespoons Confectioners Sugar, Divided
  • 1 Tablespoon Brown Sugar
  • 1 Tablespoon Ground Cinnamon

Preparation

Preheat oven to 350 degrees F. Spray a bundt pan with non-stick cooking spray.

Using a mixer, mix the butter and two cups of sugar. Once well combined, add in one egg at a time. Once egg is well combined add the sour cream and vanilla.

In a separate bowl combine the flour, baking powder, salt, baking soda, and 2 tablespoons of confectioner’s sugar. Mix together well and then slowly add it to the wet mixture until well combined.

In a separate small bowl combine the remaining 1/4 cup of sugar, brown sugar, and cinnamon.

Spread half of the wet mixture into the prepared bundt pan. Use a spatula to spread it so the batter lays flat. Then evenly sprinkle the cinnamon mixture over the top. Add the remaining wet mixture on top and once again use the spatula so that the batter is flat.

Place in the oven for 50-60 minutes. The top of the cake should be golden brown and toothpick inserted should come out clean.

Let the cake cool for 10-15 minutes. Flip onto a serving plate and sprinkle with 1 Tablespoon of confectioner’s sugar.
