Description

Do you hate finding raisins in your oatmeal cookies? Me too.

Ingredients

  • 1 cup Butter
  • 1 teaspoon Vanilla Extract
  • 1 cup Sugar
  • 2 whole Eggs
  • 1 cup White Flour
  • ¾ cups Whole Wheat Flour
  • ¾ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1-½ teaspoon Cinnamon
  • ½ teaspoons Nutmeg
  • ½ teaspoons Ground Ginger
  • 1 cup Pecans, Finely Chopped (OPTIONAL)
  • ½ cups Semi-Sweet Chocolate Chips
  • ½ cups Cinnamon Chips
  • 2 cups Rolled Oats, Uncooked

Preparation

Cream together butter, vanilla, and sugar. Add eggs one at a time. Sift together dry ingredients (all the remaining ingredients) and gently incorporate into the wet ingredients. Using a medium-sized cookie scoop (1 1/2-2 tablespoons), drop onto parchment-lined cookie sheets and bake for 10 minutes at 350ºF.

These are very dense and grainy cookies. If you prefer lighter/fluffier cookies, substitute 1 cup of white flour for the 3/4 cup whole wheat and use 1 3/4 cups oats and 3/4 cups chocolate chips. The nuts are optional!
