Simple chocolate toffee banana cookie that tastes like banana bread.
Preheat oven to 350ºF.
In a bowl, stir together coffee and vanilla until dissolved. Set aside. In a large mixing bowl, lightly beat cake mix, butter, coffee vanilla, and eggs until combined.
Add the bananas, flour, and salt and beat gently. Stir in the chocolate chips and toffee bits by hand. Drop by large spoonfuls onto a baking sheet. Bake 12-14 minutes.
Cool on sheet for 1 minute before removing to a cooling rack. Store in a loosely sealed container. Makes 24-36 cookies, depending on how big you make them.
