Super moist chocolate cupcakes with a cream cheese and chocolate chip center. You won’t ever want birthday cake again!
Preheat oven to 350ºF. Fill two 12-count cupcake tins with paper cupcake liners.
For the cupcakes, combine flour, sugar, cocoa, and baking soda in a large mixing bowl. In another mixing bowl, combine oil, water, vinegar and vanilla. Mix the wet ingredients with the dry and stir until well combined. Spoon mixture into cupcake tins filling the paper liners only 2/3 full.
For the filling, in another mixing bowl, beat the cream cheese, egg and sugar until well combined. Stir in chocolate chips. Drop heaping teaspoonfuls into the middle of the chocolate cupcakes.
Bake for 25 minutes. Allow to cool on a rack before serving. Refrigerate whatever cupcakes are not devoured, though I doubt you will have to do this even if you are the only one eating them! Enjoy!
To me, nothing beats an old-fashioned red velvet cupcake with cream cheese frosting. Well, unless it’s a slice of cake of the same! Moist, deep in flavors, slightly sweet and topped with an incredible frosting!
For those dark chocolate lovers out there, this is definitely a dessert that you need to try. I’ve never tasted anything like this cake recipe; it’s like biting into a soft chocolate bar. It is rich and full of dark chocolate flavor. Makes about 18 cupcakes.
