Description

Chocolate pie crust baked in a pizza pan, sweet cream cheese filling and sliced strawberries artfully arranged on top.

Ingredients

  • 1-⅓ cup All-purpose Flour
  • ½ cups Sugar, Plus 1/3 Cup, Divided
  • ¼ cups Cocoa Powder
  • ¾ cups Butter, Cut Into Small Pieces
  • 8 ounces, weight Cream Cheese
  • 1 teaspoon Vanilla
  • 1 pint Strawberries, Tops Removed And Cut Into Thin Slices
  • 2 Tablespoons Strawberry Jam, Or Other Red Berry Seedless Jam

Preparation

Preheat oven to 325° F. Cover a pizza pan with foil and spray the foil. Combine flour, 1/2 cup sugar, and cocoa powder in a mixing bowl. Cut in the butter pieces until it holds together. Press mixture into the pizza pan and bake in the oven for 10-15 minutes until the crust is set. Let cool completely.

Beat cream cheese with remaining 1/3 cup sugar and vanilla. Use an electric mixer if you have trouble getting it smooth. Spread the cream cheese mixture on the cooled crust. Pop into the fridge to let the filling firm up.

Arrange strawberry slices in circles over the filling. Heat the jam in microwave for about 15 seconds or until it melts and let cool. Using a pastry brush, carefully brush cooled jam over the strawberry slices. Refrigerate until ready to serve. Use a pizza wheel to slice into 8-10 wedges and, if desired, serve with whipped cream.
