Description

Olive oil cookies are moist and healthier.

Ingredients

  • ½ cups Pure Olive Oil
  • 1-½ cup Sugar
  • 3 whole Large Eggs, Beaten
  • 3 Tablespoons Milk
  • 2 teaspoons Vanilla
  • ½ cups Unsweetened Cocoa
  • 2-¼ cups Flour
  • 2 teaspoons Baking Powder
  • ¾ teaspoons Salt
  • 1 cup Powdered Sugar
  • 24 pieces Hershey Kisses

Preparation

Note: You may use dark chocolate chunks, chocolate chips or any variety of Kisses.

Preheat oven to 375F. Lightly coat a large cookie sheet with olive oil cooking spray. In a mixer bowl, add olive oil, sugar, eggs and milk. Beat well. Blend in vanilla and cocoa. Add flour, baking powder and salt. Mix until well blended. Drop by teaspoonfuls into powdered sugar and roll until well coated. Place 3 per row. Bake for 7 minutes. Remove and press a Kiss or a chunk of dark chocolate into the center of each cookie.

I thought these were delicious! Kind of remind me of a chocolate cake doughnut. Once I had all of the ingredients mixed, it was more of a thick brownie-like batter than a cookie dough. Because of this, I was wary of dropping spoonfuls in powdered sugar so for the first few I didn’t put the powdered sugar on until after they came out of the oven. Don’t do that, it’s better if you go ahead and drop them in the powdered sugar before baking. I took them out of the oven after 7 minutes, however, they were still VERY soft–even after letting them sit for a while. (I did use a baking stone, though. I just like it so much better for cookies). Due to the softness, mine were not as pretty as the ones in the pic, but I like them soft so I was not deterred. BEWARE: both dough and cookies are highly addictive! Oh, and I didn’t put a kiss or chips or anything on top–didn’t think they needed it.

I personally didn’t enjoy these. My brother swears there the best thing on this earth though. I don’t have a sweet tooth, but my brother sure does. He has his new favorite cookie!
