Description

Moist, chewy chocolately pudding cookies with white chocolate chips.

Ingredients

  • 1-½ stick Unsalted Butter, Softened
  • ¾ cups Light Brown Sugar
  • ¼ cups White Sugar
  • 2 whole Eggs
  • 3-½ ounces, weight Instant Chocolate Pudding
  • ¼ cups Cocoa Powder
  • 1 teaspoon Baking Soda
  • 2-¼ cups Flour
  • 1-½ cup Chocolate Chips (I Used 1 Cup White Chocolate Chips And 1/2 Cup Semi-sweet Chips)

Preparation

1. Preheat oven to 350ºF. Line baking sheet(s) with parchment paper.

2. Cream the butter, light brown sugar and white sugar. Add the eggs, then mix in instant chocolate pudding.

3. Whisk the cocoa powder, baking soda and flour together.

4. Add the dry ingredients to the wet, then fold in the chocolate chips (the batter will be stiff, but that’s okay!).

5. Roll the dough into 1″ balls. Place about 2-3 inches apart on the baking sheet. Bake for 8-12 minutes.

6. Let cool on cookie rack. Store covered with plastic wrap or in Tupperware.

These were delicious! I don’t think there is any way possible to get more chocolate in a single cookie. I was very curious about adding jello pudding mix to a cookie dough, but it worked out great! I did have to flatten the dough balls down with a glass dipped in sugar because these don’t flatten themselves. Just incredibly delicious and chocolatey!
