Description

These peanut butter cups are unbelievably quick and simple to make, and they taste amazing!

Ingredients

  • 1 cup Peanut Butter
  • ¾ cups Powdered Sugar
  • 3 Tablespoons Butter, Softened
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons Salt (or More, To Taste - I Add Closer To 4)
  • 2 bags High Quality Milk Chocolate Chips, 12 Ounce Bags

Preparation

Beat together the peanut butter, sugar, butter, vanilla, and 2 teaspoons of salt until creamy and well combined. Taste and add more salt as needed. (The peanut butter filling should be a bit salty to really pop against the sweet chocolate!) Set aside.

Melt the two bags of chocolate chips in the microwave by microwaving for 30 second intervals and stirring between each heating. Do not over heat!

Spoon a small spoonful of the melted chocolate into the bottom of a foil cupcake wrapper. Roll a teaspoon of the peanut butter mixture into a ball and flatten into a small disc. Place on top of the melted chocolate. Spoon more melted chocolate over the top and spread a bit to cover the peanut butter. Repeat with the remaining chocolate and peanut butter and allow to harden at room temperature (do not put in the fridge to speed this up!). Remove from the wrappers and enjoy!

What alternative could you use if you do not have the mini liners? Could you place in a pan and perhaps make small bars? If so what’s your suggestions?

These are AMAZING! I just made them last night, and they are almost gone! I used the mini muffin liners and made them in a mini muffin tin. SO GOOD!

So amazing!!! I used semi sweet. definitely would have been better with milk chocolate, but thats all I had. Even my husband liked them! Will make over and over!!
