Description

My favorite dessert combination is peanut butter and chocolate and this is a very indulgent, rich and beautiful version of the delicious peanut butter cups I love! First comes a brownie layer, then a sweetened peanut butter layer, and then it is topped with a layer of thick and creamy chocolate ganache.

Ingredients

  • FOR THE BROWNIES:
  • 1-¼ cup Butter, Cut Into Small Pieces
  • 1-¼ cup Sugar
  • ¾ cups Cocoa Powder
  • 2 teaspoons Water
  • 1 teaspoon Vanilla
  • ½ teaspoons Salt
  • 2 whole Large Eggs
  • ⅓ cups All-purpose Flour
  • 1 Tablespoon All-purpose Flour
  • 1 cup Lightly Salted Peanuts
  • _____
  • FOR THE PEANUT BUTTER LAYER:
  • 1-⅓ cup Powdered Sugar
  • ¼ cups Peanut Butter
  • 3 Tablespoons Milk
  • _____
  • FOR THE GANACHE:
  • 1 cup Whole Milk
  • 1 teaspoon Vanilla
  • 2 cups Dark Chocolate Pieces

Preparation

Preheat the oven to 325 degrees F.

Prepare an 8×8” pan with tin foil (two sheets creating an x-configuration with a 2 inch overhang of foil) and then spray the foil with cooking spray.

In a medium saucepan, over medium heat melt the butter until no longer foaming and the butter has browned, about 5 minutes.

While you are waiting for the butter to brown, combine the sugar, cocoa, water, vanilla and salt in the bowl of a mixer. Add the hot butter and scrape all of the browned bits into the bowl of the mixer and then whip to combine.
With the mixer on medium, add the eggs one at a time.
Then add the flour to combine. Add the peanuts and briefly mix in.

Transfer the batter to the prepared pan and smooth with a dampened spatula.

Bake 25 minutes and then remove from oven. Let cool.
When they have cooled enough to handle the pan, place it in the freezer at least 20 minutes.

PEANUT BUTTER LAYER
Whip all ingredients together with a mixer until creamy.
Take brownies out of freezer. Spread the peanut butter mixture evenly over the brownies. Dampen the spatula to get a smooth finish. When there is an even layer of peanut butter, put it back in the freezer, at least 20 minutes.

GANACHE
In a small sauce pan, over medium heat, heat the milk and vanilla until almost boiling.

Meanwhile, place the chocolate pieces in a medium heatproof bowl. Dump the hot milk over the chocolate and leave for about 5 minutes. When you have let the chocolate and milk sit and they look melted, whisk vigorously with a metal whisk until thick and glossy.
Spread the ganache evenly over the peanut butter layer. Place in the freezer for about an hour.

Pull the brownies out of the pan (by the foil overlaps). Place the block of frozen brownies on a cutting board. Trim the edges and then slice with a sharp knife into bars.
Serve and enjoy!

I may have cheated myself because I only made the bottom layer, but that bottom layer on its own was pure delish. I cannot possibly describe how wonderful these brownies are.

I made this for a Valentine’s Day dessert. It is perfect for chocolate-peanut butter lovers! It is very rich and creamy, and I loved the peanuts in the bottom layer. The layers looked exactly like the picture. I only had skim milk so I think the chocolate didn’t thicken like it was supposed to. When taking the brownie layer out of the oven, I wasn’t sure it was done because it was still glossy with a pudding consistency. But freezing the layer (as stated in the directions) did the trick. I had to store it in the freezer until it was gone because the ganache got melty otherwise.

Delicious dessert!

These were super delicious. So rich! The browned butter adds a great note of sophistication.

I skipped the peanuts in the brownie layer because I don’t do nuts in brownies. But I think next time I’ll add more peanut butter in the middle layer to make up for the lack of peanut flavor.

Also, somehow my ganache came out a little too soft. Maybe I should have chopped up my chocolate pieces a bit before measuring?
