Description

This rich, marbled cheesecake is a great addition to any dessert table. The combination of orange and chocolate is a classic.

Ingredients

  • FOR CRUST
  • ¾ cups Chocolate Wafer Cookie Crumbs
  • ¼ cups Sugar
  • 1-½ Tablespoon Melted Butter
  • _____
  • FOR FILLING:
  • ¼ cups Plus 2 Tablespoons Semisweet Chocolate Chips
  • 24 ounces, weight Cream Cheese, Softened
  • 1-⅓ cup Sugar
  • 3 whole Eggs
  • 1-½ Tablespoon Fresh Orange Juice
  • ¾ teaspoons Grated Orange Rind

Preparation

Combine chocolate wafer crumbs, 1/4 cup sugar and melted butter. Press onto bottom of 9 inch springform pan that has been sprayed with pan release spray. Bake at 325 degrees for 8 minutes, remove from oven.

Melt chocolate and reserve.

Combine softened cream cheese and sugar in mixer; mix until smooth.

Add eggs, one at a time and mix just until blended (do not overbeat). Add orange juice and rind and combine.

Reserve 1 1/4 cups batter and pour remainder into pan. Mix melted chocolate into reserved batter, then swirl chocolate batter through batter in pan for a marbled effect.

Bake for 1 hour, then turn oven off and leave in the oven for an additional 20 minutes.

Cool cheesecake in refrigerator for 6 hours or overnight before serving.
