Description

Is there anything better than a cookie fresh from the oven? These chocolate cookies are stuffed full of hearty oats and dried cranberries.

Ingredients

  • 3-⅝ ounces, weight Granulated Sugar
  • 4-½ ounces, weight All-purpose Flour
  • 4-½ ounces, weight Oats
  • 1-⅞ ounces, weight Dried Cranberries
  • 3-⅝ ounces, weight Chocolate Chips
  • 4-½ ounces, weight Unsalted Butter
  • 1-½ Tablespoon Golden Syrup Or Light Corn Syrup
  • 2 Tablespoons Water
  • 1 teaspoon Baking Soda

Preparation

1. Preheat the oven to 160ºC/300ºF. Line 2 baking sheets with greaseproof paper or a silicone mat.
2. Put the sugar, flour and oats, cranberries and chocolate chips in a large heatproof bowl.
3. In a small pan, heat the butter, golden syrup and water until the butter has melted. Take the pan off the heat and add the bicarbonate of soda. The mixture will fizz up. This is fine.
4. Pour the hot liquid over the dry ingredients and stir to combine. Form teaspoonfuls of the dough into balls, place the balls on the baking trays and press down. Make sure that there is at least 2 inches between each ball.
5. Bake for 10 minutes until the cookies look to be set and are just beginning to crisp around the outside. Leave to cool for 5 minutes on the baking tray to firm up before transferring to a wire rack to cool.
