Description

These minty delights are so delish! The chocolate mint combo is always a winner!

Ingredients

  • 1-½ cup Flour
  • 1-½ teaspoon Baking Powder
  • ¼ teaspoons Salt
  • 1-½ cup Semi-Sweet Chocolate Chips ( I Like To Use 1/2 Dark And 1/2 Semi-sweet)
  • 6 Tablespoons Butter Or Margarine, Softened
  • 1 cup Sugar
  • 1-½ teaspoon Vanilla Flavoring
  • ¼ teaspoons Mint Flavoring
  • 2 whole Eggs
  • ½ cups Icing Sugar

Preparation

1. Combine flour, baking powder and salt in a bowl. Mix and set aside.

2. In a sauce pan melt 1 cup of the chocolate chips over low heat stiring constantly. Remove from heat once melted. Set aside.

3. Beat butter with a mixer on medium speed for 30 seconds. Add in sugar and cream them together. Add melted chocolate and mix together well.

4. Add vanilla, mint and eggs and stir until well combined.

5. Slowly add flour mixture and remaining chocolate chips into the creamed mixture. Stir until it is all mixed together.

6. Wrap in wax paper or chill in the bowl for about 3 hours of until firm enough to roll into balls.

7. Roll into balls and roll in icing sugar. Place on parchment paper-lined cookie trays and press down slightly.

8. Bake in a 350 degree F oven for 10 or 12 minutes. Cool 2 minutes on the cookie sheet then transfer to a wire rack and cool completely.

Makes about 42 cookies. I ALWAYS double this recipe!
