Description

This is a quick and easy recipe that has an awesome presentation. Serve warm from the oven, when the marshmallow is still warm and gooey, so it flows out of these mini cakes when your guests cut into them.

Ingredients

  • 1-⅓ cup Semi-Sweet Chocolate Chips
  • ¼ cups Unsalted Butter
  • ⅓ cups Granulated Sugar
  • 2 whole Eggs
  • ½ teaspoons Pure Vanilla Extract
  • 1 cup All-purpose Flour
  • 6 whole Large Marshmallows

Preparation

In a pot over low heat, melt chocolate chips and butter. Stir until smooth. Remove from heat and stir in granulated sugar, eggs, and vanilla until well blended. Stir in flour.

Fill 6 buttered and floured ramekins halfway with batter. Press a marshmallow into the center of the batter in each ramekin. Spoon remaining batter equally over the marshmallows, covering completely.

Place ramekins on a baking sheet. Bake in a 350 degree oven until the tops are puffed and cracking, about 12-15 minutes. Allow to cool for 10 minutes. Run a small knife around the inside edge of each ramekin, and turn upside down to release the cake. Place cakes right side up on plates and dust with powdered sugar. Serve warm.

I made this for my boyfriend’s birthday tonight and they were utterly amazing (I also had to impress his parents as this is the first time I’d really cooked for them). They couldn’t finish their whole cakes, but took them home for later, which I feel is even better than devouring it.

These were absolutely amazing, though I cut the recipe so it’d make 4, there wasn’t enough batter to cover the marshmallows, so I’d make it for 5 servings and put it into 4 ramekins.

They were also so good, he requested them, again, for tomorrow to show me off for his friends. AMAZING!

vpireiner…. Sorry it didn’t work out for you. I’ve gotta say I’m surprised. This is a really simple recipe and goes together very quickly. Wondering where it went wrong?

I was surprisingly disappointed. I hope I just missed something. I used the 7oz ramekins, so this only made 4. The marshmallow part was awesome, but the chocolate cake was grainy, dense, heavy and not hardly cakey. I think if I were going to do this again I’d use a different cake recipe and add the marshmallow to it.

I don’t have six ramekins or a jumbo muffin tin, so I tried it in a normal muffin tin with the marshmallows cut in half. It didn’t really work- the marshmallows just sunk into the rest of the batter, but the finished product was still gooey and good tasting.
